Packed with seasonal ingredients, this salad is a celebration of autumn's bounty, bringing together a symphony of colors, textures, and tastes. Ingredients:
7 cups kale ¼ cup dried cranberries 1 pear, diced 2 cups butternut squash, diced 3 Tablespoons butter ½ teaspoon cinnamon 1/8 teaspoon nutmeg Dash salt ¼ cup pumpkin seeds ½ cup pomegranate arils 8 ounces goat cheese ½ cup pecans, chopped
Balsamic Maple Dressing (below)
Instructions:
1. In a microwave bowl, combine butternut squash, butter, cinnamon, salt and nutmeg. Microwave for 7 minutes or until cooked but still firm. Spread out on parchment paper to cool.
2. In a salad bowl, mix together kale, cranberries, pear, cooled butternut squash, pumpkin seeds and pomegranate arils.
3. Slice goat cheese into rounds (we used pumpkin flavored for this recipe but if you can’t find that, plain will still be delicious). Set in a bowl of chopped pecans and press pecans into cheese. Add to salad.
For the dressing:
¼ cup Balsamic vinegar 3 Tablespoons olive oil 3 Tablespoons maple syrup 3 Tablespoons brown sugar 1/2 teaspoon cinnamon ¼ teaspoon salt Dash of pepper Mix all ingredients in a glass jar and stir until well combined. Pour over salad and mix.
