When it comes to elevating the ordinary, introducing a hint of cinnamon and coconut with a crunch of almond to a traditional biscotti is a game-changer. These delightful treats, with their perfect balance of warmth and sweetness, and exactly what is needed to jump start a cold wintry day.
Over the holidays I was wandering through the grocery store looking for inspiration and something “different” to make and I saw that there were cinnamon chips in the baking aisle. I grabbed a bag but had no clue what I was going to do with them. When I was playing around with the recipe below, I knew that the coconut and almond combination would be great, but I thought that the addition of the cinnamon would bring just a touch of spice to warm a body up. It didn’t disappoint!
Ingredients:
½ cup butter
1 cup sugar
3 eggs
1 teaspoon almond extract
2 teaspoons coconut extract
1 teaspoon ground cinnamon
3 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup cinnamon chocolate chips
1 cup slivered almonds
½ cup flaked coconut
Instructions:
Cream together butter and sugar until fluffy.
Add eggs, one at a time, mixing well after each.
Mix in almond extract, coconut extract, and ground cinnamon and blend well, for about 30 seconds.
Sift together flour, baking powder, and salt; add to creamed mixture and mix until combined.
Fold in almonds, coconut flakes, and cinnamon chips.
Divide the dough in half; form each piece into a log that is approximately 12 inches long and 1 inch tall. Place on a baking sheet lined with parchment paper.
Bake, in a preheated oven, at 350 degrees for 35 minutes or until the bottoms are just starting to brown.
Remove from oven, slice on a diagonal and place back on cookie sheet with one of the cut sides facing up.
Bake, still at 350 degrees, for 7 minutes longer; flip cookie over and bake on the other cut side for an additional 7 minutes. Cool completely.
I don’t show it pictured here, but I did drizzle some with melted chocolate; they are delicious both with and without, it just depends on your preference for sweet.
