Ingredients:
1 (10 ounce) package frozen chopped spinach, thawed
1 yellow onion, finely chopped
3 garlic cloves, minced
1 cup cottage cheese
3 ounces goat cheese
2 Tablespoons lemon juice
4 teaspoons Italian seasoning
Salt and pepper to taste
8-10 thinly chicken breasts
4 Tablespoons butter, melted
Instructions:
Squeeze excess water out of thawed spinach; in a large bowl, combine spinach, onion, garlic, cottage cheese, goat cheese, lemon juice and a dash of salt and pepper.
Season chicken breasts with Italian seasoning; then place a spoonful of spinach mixture into the center of each breast and fold in half. Secure with a toothpick and placed in a lightly greased 9x13 inch baking dish.
Once all of the chicken breasts are stuffed and in the pan, sprinkle with salt and a dash of lemon juice. Drizzle with melted butter.
Bake, in a preheated oven, at 350 degrees for 25-30 minutes or until chicken is fully cooked and juices run clear.
Garnish with parsley and serve immediately.
