Start by washing, peeling, and slicing your fresh carrots into rounds. You want them uniform in size to cook evenly. Cook carrots until al dente, drain completely.
In a large bowl combine carrots, onions, and green pepper. In a separate bowl, mix together soup, vinegar, oil, sugar, and mustard. Stir until mixed thoroughly and pour over carrot mixture.
Stir carrot mixture until evenly coated with marinade; refrigerate overnight.
