As we head into a new year, most of us are on overload from the heavy decadent desserts of the holidays and looking for lighter ways to satisfy a sweet tooth. These Pistachio Cookies are the perfect answer to that need! The rich, earthy flavors of the pistachios with a hint of coconut and a cheerful green color can almost convince you that spring really is just around the corner!
Ingredients:
1 cup raw pistachios, shelled and chopped
1 cup unsalted butter, softened to room temperature
1 egg
2/3 cup sugar
2 teaspoons coconut extract
1 teaspoon vanilla extract
2 drops green food coloring
2 ½ cups all-purpose flour
½ cup powdered sugar
Instructions:
1. In a large bowl, cream butter until smooth. Add 2/3 cup sugar and egg and blend until smooth.
2. Add the chopped pistachios, coconut extract and vanilla extract and mix on low until fully incorporated.
3. Add green food coloring and mix until streaks of color dissipate. Gradually add flour and mix to combine.
4. Using a spoon, scoop out dough and form into a ball; roll in powdered sugar. Place on a cookie sheet lined with parchment paper.
5. Bake, in a preheated oven, at 350 degrees for 14 – 16 minutes or until the edges began to brown lightly.
6. Cool completely.
This recipe results in a soft cookie that isn’t overly sweet. Pistachios aren’t the usual go-to option for a cookie but the next time you are in the mood for something sweet, go a little nuts with some of these pistachio cookies. They just might become your new favorite!
