Mouthwatering Main Dishes: Pomegranate Glazed Salmon

Salmon is one of our favorite proteins but I get tired of making it with the same flavors every time. Now, don’t get me wrong, there is absolutely nothing wrong with dill and butter but sometimes you’re just in the mood for something a little different. On a recent trip to the grocery store I saw the first pomegranates of the season and immediately thought about how to pair them with salmon given how well it meshes with various flavor profiles.


Nothing shouts fall for me quite like the arrival of pomegranates in our grocery stores. For a month we eat them in salads, fruit salads, on cereal, in oatmeal – but we don’t usually eat them in savory dishes which is why we loved this recipe. With a burst of tangy pomegranate, this dish hits just the right note of savory and sweet! The teriyaki and sweet chili bring another flavor profile and just the hint of crushed red pepper adds a heat that balances perfectly with the sweetness of the pomegranate. We served with rice and sweet potatoes for a meal that warmed you from the inside out!




Ingredients:

1 salmon fillet, about 4 pounds

3 Tablespoons olive oil

Salt and pepper to taste

6 Tablespoons pomegranate juice

¼ cup honey

2 Tablespoons maple syrup

3 teaspoons brown sugar

6 Tablespoons teriyaki sauce

5 Tablespoons sweet chili sauce

2 Tablespoons lemon juice

2 garlic cloves, minced

1 teaspoon minced ginger

Fresh pomegranate arils for garnish


Instructions:

1. In a small saucepan, combine pomegranate juice, honey, syrup, brown sugar, teriyaki sauce, sweet chili sauce, lemon juice, garlic and ginger. Over medium heat, bring the mixture to a boil; reduce heat and let simmer for 15-20 minutes or until the glaze thickens. Stir occasionally.

2. Place the salmon on a cooking sheet and pat dry. Rub with olive oil and sprinkle with salt and pepper. Drizzle ½ of the glaze over the salt and pepper.

3. Bake, in a preheated oven, at 325 degrees for 20-23 minutes or until the salmon flakes.

4. Remove from oven and pour remaining glaze over the cooked fish. Sprinkle with pomegranate arils.


This Pomegranate Glazed Salmon recipe is a masterpiece of flavors that entices you to go back for seconds! If you have leftovers, don’t worry. It’s also great on a salad with just a drizzle of Balsamic Vinegar as a dressing.
