Ingredients:
6 Tablespoons butter
1 onion, finely diced
3 ribs celery, finely chopped
3 garlic cloves, minced
2 boxes Uncle Ben’s Wild Rice with seasoning packets
12 cups chicken broth
½ cup flour
3 cups shredded turkey
2 bay leaves
1 ½ cups heavy cream
Salt and pepper to taste
Instructions:
In a large pot, melt butter over medium heat; add onion, celery and minced garlic and cook for 10 minutes.
Add broth and bring to a boil. Whisk in flour, then add both boxes of rice along with seasoning packets and bay leaves. Continue to boil for 30 minutes over medium low heat. Reduce heat.
Add shredded turkey and simmer for 15-20 minutes.
Just before serving, add cream and salt and pepper to taste and simmer for 10 minutes or until heated through. Garnish with chopped parsley before serving.
